LA CHINESCA BY KOOKIE SANTOS

PHP 850

La Chinesca is a Mexican restaurant inspired by diverse flavor profiles and a clash of cultures. It started as an exclusive pop-up concept in 2015—a fun, casual outlet for my husband, Bruce Ricketts, to recreate the Mexican favorites he enjoyed as a teen and young cook in San Diego, California, long before he became obsessed with Japanese cuisine. La Chinesca found its brick-and-mortar footing as a hole-in-the-wall joint in BF Homes, Parañaque, in 2017, and in 2018 we opened La Chinesca at The Grid, a stall at The Grid Food Market, Power Plant. Both branches have been serving takeaway, pickup and delivery throughout quarantine.

Kookie Santos is a graphic designer with an interest in type and a hunger for tacos. She is a partner and creative director at Serious Studio.

RAMEN YUSHOKEN BY HEY MADY

PHP 850

Setting the bar for ramen dining, Mendokoro Ramenba was launched in 2014 with the ramen bar format that was the first in the industry. It was groundbreaking and risky and yet it was well received by many. It is known for the “no compromise” approach in developing the menu and dining experience. The bar format was done simply to cut the distance between the kitchen and the customer as temperature plays such a huge role in the enjoyment of the dish. Queueing has been an integral part of the Mendokoro Ramenba experience. As a testament of the quality, people line up from 1 to 5 hours just to enjoy a bowl of ramen.

"BILAO"

TOYO EATERY  BY NICOLE COSON

PHP 850

Toyo Eatery prides itself on being a Filipino restaurant. With just a few city miles on its brow, Toyo Eatery, through Jordy Navarra, has been finding new ways to present familiar Filipino flavors, through bright new dishes. Their creativity has piqued the interest of other chefs around the world, which has led Navarra and his team to work with the likes of chefs from Singapore, Indonesia, Taiwan, Japan, and Belgium. Navarra insists that there is still much to learn and more to do, which he and his team at Toyo Eatery are continuously uncovering.

Nicole Coson’s piece for the Manila Takeout  x Toyo Eatery shirt focuses on the bilao. While traditionally used in the Philippines to winnow rice, the bilao is now frequently seen as a serving tray, holding anything from pancit to kakanin. It’s also become a symbol of gathering, celebration, sharing and coming together. At the start of Manila’s lockdown, when restaurant operations were limited to takeout, Toyo traded in their multi-course menu for a straightforward single bilao. It has since come to represent the team’s solidarity and combined strength, amidst the unexpected time the world now faces.
