"BILAO"

TOYO EATERY  BY NICOLE COSON

PHP 850

Toyo Eatery prides itself on being a Filipino restaurant. With just a few city miles on its brow, Toyo Eatery, through Jordy Navarra, has been finding new ways to present familiar Filipino flavors, through bright new dishes. Their creativity has piqued the interest of other chefs around the world, which has led Navarra and his team to work with the likes of chefs from Singapore, Indonesia, Taiwan, Japan, and Belgium. Navarra insists that there is still much to learn and more to do, which he and his team at Toyo Eatery are continuously uncovering.

Nicole Coson’s piece for the Manila Takeout  x Toyo Eatery shirt focuses on the bilao. While traditionally used in the Philippines to winnow rice, the bilao is now frequently seen as a serving tray, holding anything from pancit to kakanin. It’s also become a symbol of gathering, celebration, sharing and coming together. At the start of Manila’s lockdown, when restaurant operations were limited to takeout, Toyo traded in their multi-course menu for a straightforward single bilao. It has since come to represent the team’s solidarity and combined strength, amidst the unexpected time the world now faces.

LAGRIMA

BY MIGUEL LUGTU & IAN ANDERSON

Lagrima is a neighborhood restaurant tucked away in an unassuming space in Legazpi Village. It opened its doors on 2016 with the simple intent of bringing a small bite of Los Angeles back to Manila. Miguel Lugtu is a graphic designer and art director who is currently figuring out if advertising is his thing. He is based in Shanghai but 2020 got him stuck in Manila and working from home for McCann Worldgroup Shanghai indefinitely.
